Micellar water is water containing surfactants organized in micelles. A micelle is a spheroidal aggregate of surfactant molecules. Hydrophobic interaction is responsible for micelle formation, through the association of the lipophilic parts of the surfactant molecules.

The surfactant(s) must be used at a higher concentration than that which enables them to organize themselves into micelles. This concentration is called the critical micellar concentration or CMC.
